NARRAGANSETT–Courtney Quinlan, 24, and Rebecca Babcock, 25, now help run a restaurant. Six months ago if you had asked them what their futures held, slinging hash and beating together omelets would not have been a prospect.
"This restaurant just fell into place and...well, into our laps," Rebecca said. Her father, Scott Babcock, also was not expecting to be a restaurateur. For 30 years he has been a fisherman at Galilee, 18 of those years as owner and operater of the Rebecca May (whose picture proudly hangs on the back wall.) Since the opening on Nov. 8, all hands have been on deck for The Boon Street Diner.
Quinlan, originally from Springfield, Mass., said that Babcock had contacted her about an empty space in a family building. Quinlan had been coming to her family's Matunuck beach home since she was a child. Rebecca was born and raised in South Kingstown and her father said it was his aim was to create a "family business with good food at a reasonable price." Scott had pitched the idea of opening a restaurant to his daughter and Courtney offered to help. "I told Scott that I was a damned fine cook. And I figured working in a restaurant with my friend was definitely more appealing than what I had been doing," she said.
"I don't feel shackled," Courtney said, when questioned about the long hours involved in operating a restaurant. "Rebecca and I have worked together before. When you're close with someone, it doesn't feel like work." To which Rebecca added with a chuckle, "Well, it does feel like work when it's really busy."
